Wild river fish loofah tofu soup

- Calcium: Tofu is a good source of calcium. Cooking it with fish soup can help supplement calcium and is good for bone health.
- Vitamins and minerals: Fish contains vitamin D, B vitamins, etc. It can also provide minerals such as potassium and phosphorus, making the nutrition more balanced.
Ingredients
- 500g wild fish. If there is no wild fish, use crucian carp instead

- a loofah

- a piece of tofu

- Two free-range eggs from my hometown

- a pinch of salt

- 4 Spoon 🥄 Rapeseed oil

- 150 gram mushrooms

- a pinch of pepper

- Ginger

Steps
- clean the fish and drain the water for later use

- Peel the loofah and cut into pieces for later use.

- Wash the enoki mushrooms with clean water and set aside

- Cut the tofu into small cubes and set aside

- Chopped ginger and green onion knots for later use

- Heat the pan and oil, put the cleaned fish into the pan, and fry slowly over low heat.

- Slide and fry until browned.

- Fry it like this and use a spatula to mash it up.

- After mashing, fry over low heat until the moisture is dry.

- After mashing, pour in boiling water to make the soup milky white, and the water should cover the ingredients.

- Add a few slices of ginger and a knot of scallion to remove the fishy smell, cover and simmer over medium heat for 8 minutes.

- Heat oil in another pan.

- Heat oil in a pan and add two free-range eggs. Turn down the heat and use a spatula to shape them. Cut until both sides are browned and set aside.

- Cut the fried eggs into small cubes and set aside

- When the time is up, open the lid and a fragrant aroma will come out. The soup will turn into a milky white color without any seasoning.

- Remove the fish from the water and drain it into another container to remove the ingredients and bones.

- Add the sliced loofah and enoki mushrooms to the filtered soup to enhance the flavor, add the cut eggs and a piece of tender tofu. For seasoning, just add a spoonful of salt and a little pepper, no other seasoning is needed. Cook over high heat for 4-5 minutes and turn off the heat.

- Add some chopped green onion and wolfberry, and a bowl of delicious river fish tofu soup is ready. It is rich in nutrition and is especially suitable for the elderly and children.
