Pumpkin pie (sesame and breadcrumbs version)



Covered with white sesame or bread crumbs, golden and crispy, drizzled with brown sugar syrup to add a bright color. Take a bite, the outside is crispy and the inside is glutinous, the sweetness of pumpkin blends with the richness of brown sugar, and the bread crumbs bring a rich taste. Ingredients
- 300g pumpkin (250 grams of pumpkin puree is needed. This recipe is about 40 grams per pumpkin cake, a total of 12 pumpkin cakes)

- glutinous rice flour (about 200 grams)

- sugar (50g)

- white sesame (Moderate)

- bread crumbs (Moderate)

Steps
- Peel and cut old pumpkin (less water and higher sweetness) into pieces in advance, steam it and press it into fine pumpkin puree, take 250 grams and set aside.

- Add 200g glutinous rice flour and 50g sugar to pumpkin puree, stir into flocculent state first, then knead into a non-sticky and tough dough (if it is too dry, add a little pumpkin puree, if it is too sticky, add glutinous rice flour).

- Divide the dough into long strips, cut into small pieces of about 40 grams each, roll into balls and set aside.

- Take a small dough, roll it into a ball and gently press it into a thin pancake with your palm (1-1.5 cm thick, don't press it too flat to avoid it breaking).
If you like runny fillings, you can fill it with red bean paste, taro paste, etc. before pressing the pancake.

- Brush a little water on the surface of the pancake and sprinkle with white sesame seeds or bread crumbs to increase the taste and appearance.

- Brush a pan with a thin layer of oil, heat over low heat, put in the pumpkin cake, fry until the bottom is golden brown, turn over, and keep the heat low (about 3 - 5 minutes/side), until the cake is puffed up and crispy on both sides.
Tips: Turn over frequently during frying to avoid burning.
