Cheesy Mashed Potato Baked Rice


The instant you pop this cheesy mashed potato baked rice into your mouth, you'll squint your eyes and let out a satisfied groan! The golden, stringy cheese, mixed with the smooth mashed potatoes, is adorned with diced vegetables and bacon, and the rice, coated in the fragrant egg, is incredibly tender and flavorful. With every bite, the aroma of milk, rice, and the umami flavors of the ingredients swirl in your mouth. Ingredients
- cold rice (one bowl, about 350 grams)

- Potatoes (250g)

- Carrots (about 20 grams)

- Onions (1 piece about 10 grams)

- Celery (1)

- Bacon (1 piece)

- sausage (1 root)

- Eggs (1)

- salt (1 tsp)

- Light Soy Sauce (1 spoon)

- 1 tsp sugar

Steps
- Peel the potatoes and steam them in a pot. (If steaming just the potatoes, cut them into small pieces to shorten the steaming time; I steamed other meats at the same time, so I steamed the potatoes whole.) Once cooked, mash the potatoes and set aside. If you're not mashing potatoes, skip this step.

- Chop the washed celery, onion, sausage, bacon, and carrot into small pieces and set aside.
You can also adjust the ingredients to your liking; feel free to choose.

- To prepare the cold rice: Add a small spoonful of cold water to loosen it. To enhance the flavor and color of the fried rice, beat in an egg and mix well. If you don't like eggs or have other dietary requirements, proceed directly to the next step of making fried rice and skip adding the egg.

- Add a little oil to a pan and add onions, celery, bacon, and carrots. Stir-fry until fragrant and dry. Remove from heat and set aside. If you didn't add eggs to the rice, add the rice directly after sautéing the side dishes.

- Heat oil in a pan (lard is recommended for a richer, more fragrant fried rice; cooking oil is also acceptable if lard is unavailable). Pour the cold rice into the pan and stir-fry until each grain is distinct. Add the previously sautéed celery, carrots, and other side dishes, stir-fry evenly, and season with 1 teaspoon of soy sauce, salt, and a small amount of sugar (to enhance the flavor and enhance the saltiness). (Note: The bacon and sausage are already salty, so don't overdo it.)

- Prepare an ovenproof baking dish. Place the cooked rice in it, top with mashed potatoes (if making), and sprinkle with mozzarella cheese. Bake in a preheated oven at 180°C for 15 minutes, until the cheese is melted and the surface is golden brown. Enjoy.
