Mushroom washed & soaked with water for about 3 hours
Scallops washed and soaked with water for an hour
Ginger peeled & smashed with the side of the knife
Squeezed water from mushroom (keep the liquid) and sliced
Drain water from scallops & keep the liquid
Put mushroom & scallop water into the 3 litres water and turn on high heat until boiled. Add in ginger, sliced mushroom and scallops and keep boiling. Once boiled turn to medium heat and keep boiling for about 10 minutes .
Put hairy melon into the boiling soup and keep boiling for another 10 minutes.
Put seasoned pork into the boiling soup without stirring it for about 2 minute.
After cooking the pork for about 2 minutes, stir to break up the pork slices and boiled for another 3 minutes.
