  9. Put mushroom & scallop water into the 3 litres water and turn on high heat until boiled. Add in ginger, sliced mushroom and scallops and keep boiling. Once boiled turn to medium heat and keep boiling for about 10 minutes .

  10. Put hairy melon into the boiling soup and keep boiling for another 10 minutes.
