Apple Cola Pork Chop

This pork chop is absolutely amazing! The apple aroma is incredibly prominent, sweet but not cloying, and the flavor seeps into every strand of meat.
The best part is the braising sauce; it's glistening with oil, the salty and sweet flavors perfectly balanced—you could easily eat an extra bowl of rice with it! The meat is pork shoulder, with a bit of fat, crispy on the outside and tender and juicy on the inside. The apple, soaked in the fruity aroma, is soft and fluffy, and when eaten with the meat, it's refreshing and delicious—you won't want to lick the plate clean!
Ingredients
- 300g pork shoulder (Choose this type of pork shoulder with marbling.)

- 300g Coca-Cola

- One apple, about 250 grams

- Two tablespoons of light soy sauce

- 1 tablespoon of dark soy sauce

- 100g onion

- A suitable amount of shredded ginger

- baking soda 1 gram

- 10g cooking wine

- Two tablespoons of light soy sauce

- 1 tablespoon of oyster sauce

- Black pepper to taste

- 10g corn starch

Steps
- Select pork shoulder with marbling. Use a meat mallet (or the back of a knife if you don't have one) to tenderize and flatten the meat, making it less firm and drier.
Then add black pepper, cooking wine, a pinch of baking soda, light soy sauce, oyster sauce, shredded ginger, and cornstarch. Mix well and marinate for at least 3 hours (the longer the marinating time, the more flavorful it will be; marinating overnight is even better!).

- Core and chop the apples, and slice/chop the onions. Put everything in a plate and set aside to avoid being flustered when cooking.

- Put plenty of oil in the pan. Once the oil is hot, put the marinated pork chops in and fry over medium-low heat until golden brown on both sides and slightly crispy at the edges (don't overcook them, as they will be braised later).

- Add the chopped apple and onion and stir-fry for a couple of seconds. Then add 2 tablespoons of light soy sauce, 1 tablespoon of dark soy sauce, and 300ml of cola (enough to cover half of the pork chop).

- Bring the cola sauce to a boil over high heat, then reduce to the lowest heat, cover, and simmer for 10 minutes (turning the pork chops once during this time) to allow the sweetness of the apple and the aroma of the cola to fully infuse the meat. Finally, turn the heat to high and reduce the sauce until it thickens and coats the pork chops. Then turn off the heat and plate the pork chops!

- After cutting, you can pour the sauce from the pot over it.
