Stir-fried crispy shredded lettuce

This dish is both beautiful and delicious. The shredded lettuce is as green as jade and dotted with golden carrot shreds. It is visually very healing. The shredded lettuce retains just the right crispness and tenderness, with a fresh and natural taste. The simple stir-fry brings out the natural sweetness of the ingredients. It is refreshing and not greasy. It is definitely a fresh dish on the table~
Ingredients
- 1 celery lettuce, about 1000g

- Scallion white

- 2 - 3 cloves of garlic

- 1 tsp salt

- 1 tsp chicken stock

- a little carrot or red pepper for garnish

- onion optional

Steps
- Peel the lettuce, cut it into thin slices, and then cut it into even thin strips. Put it in a bowl and soak it in a little water to prevent oxidation and discoloration. Set aside.

- Cut the scallion into 3 cm long segments; flatten the garlic with a knife; cut the carrots into very thin strips for decoration; use a small amount; if you like spicy food, use shredded red pepper instead.

- Pour a proper amount of cooking oil into the pan and heat over medium-low heat. When the oil is hot, add the garlic and scallion segments, stir-fry until the garlic is slightly golden and the scallion segments are fragrant, to stimulate the basic aroma.

- Garnish (optional): If using shredded carrots, add them now and stir-fry quickly.

- Turn the heat to medium-high, add the shredded lettuce and stir-fry quickly to keep the crispness. Stir-fry for 1-2 minutes until the shredded lettuce turns darker in color and softens slightly.

- Add 1 teaspoon of salt and 1 teaspoon of chicken stock, stir-fry evenly to let the flavor coat the ingredients. If you like the onion fragrance, add chopped green onions to enhance the flavor before serving. Serve.
