Rock Sugar Kumquat Paste

Make some rock sugar kumquat syrup for your family in autumn and winter. It's sweet, delicious, and soothing to the throat. Just mix it with warm water. It's rich in vitamin C, gentle and soothing, and my family loves it. When you have a sore throat, a cup of this is more effective than medicine.
Ingredients
- 700g fresh kumquats

- 40 % rock sugar (280g)

- Add two slices of lemon if you like a slightly sour taste.

Steps
- First, rub the kumquats with a little salt.

- Rinse thoroughly with clean water.

- Cut into thick slices, sprinkle with rock sugar and marinate for about 10 minutes.

- Pour into a pot and simmer over medium-low heat.

- Sauté while stirring, and remember to use a non-stick pan.

- Simmer the kumquats until they become translucent and thick.

- After cooling, bottle and seal for storage. When you want to eat it, take some kumquat paste and mix it with warm water.
