Indonesian Fired Rice (Nasi Goreng Pedas)
A quick and flavorful stir-fried rice dish with sweet soy sauce, garlic, shallots, chili, and your choice of chicken, shrimp, or vegetables. Topped with a fried egg for a classic touch!
Ingredients
- 2 cup cooked rice (preferably day-old)
- 2 tablespoons vegetable oil
- 2 eggs
- 1 chicken breast (diced - optional)
- 2 tablespoons sambal oelek
- 2 tablespoons kecap manis
- 1 small onion (finely chopped)
- 2 cloves garlic (minced)
- 1 teaspoon shrimp paste (optional)
- 1 tablespoon soy sauce
- salt and pepper
- 1 cucumber (sliced)
- 1 Fried shallots (for garnish)
Steps
- Finely chop the onion, garlic, and dice the chicken. Have your sambal oelek, kecap manis, and other seasonings ready.

- Heat 1 tablespoon of oil in a pan, add the lightly beaten eggs, and scramble them. Once cooked, set them aside.

- Heat the remaining oil in the pan, add the diced chicken, and cook until browned. Then, add the chopped onion and garlic and sauté until fragrant.

- Add sambal oelek, kecap manis, soy sauce, and shrimp paste (if using). Stir everything together until well combined, coating the chicken with the sauce.

- Add the cooked rice to the pan and mix well until the rice is evenly coated. Add the scrambled eggs back in and stir. Cook for a few more minutes.
