Roast lamb shoulder with mint yoghurt sauce

This dish features a tender, oven-roasted lamb shoulder infused with aromatic herbs and spices, resulting in rich, savory flavors. Paired with a refreshing mint yogurt sauce, it offers a delightful contrast of tastes and textures, making it a perfect centerpiece for any meal.
Ingredients
- 1 kg Lamb shoulder

- 2 T baby capers (washed and chopped)

- Small bunch of thyme (leaves picked and chopped)

- 3 cloves of garlic (peeled and finely grated)

- Zest of 1 lemon

- 1 and half teaspoons of salt

- 2 T Olive oil

- 200 ml yoghurt

- Juice of half a lemon

- Small bunch of mint, washed & finely chopped

- 1/2 teaspoon of ground cumin

- Pinch of salt to taste

Steps
- To make the mint Yoghurt sauce, mix the yoghurt, chopped mint, lemon juice, cumin powder and a pinch of salt. Stir well and refrigerate until ready to serve

- In a bowl, mix the chopped capers, thyme, grated garlic, lemon zest, 1t salt and 2T olive oil to create a marinade. Preheat the fan oven to 160 degree Celsius

- Evenly spread the marinade over the lamb shoulder

- Roll the lamb shoulder tightly and secure it with butcher’s string

- Rub a little extra olive oil over the outside and season with salt

- Place in preheated oven for 2 and half hours, checking after 2 hours to ensure internal temperature reaches 160 degree Celsius.

- Let the lamb rest for 15 minutes before slicing.
