  2. In a bowl, mix the chopped capers, thyme, grated garlic, lemon zest, 1t salt and 2T olive oil to create a marinade. Preheat the fan oven to 160 degree Celsius

  4. Roll the lamb shoulder tightly and secure it with butcher’s string

  5. Rub a little extra olive oil over the outside and season with salt

  6. Place in preheated oven for 2 and half hours, checking after 2 hours to ensure internal temperature reaches 160 degree Celsius.
