Braised Winter Melon with Tofu and Grilled Pork Belly
Braised winter melon with pork belly and tofu is a delicious home-cooked dish. The golden fried gammon steak (probably pork belly) is stewed with winter melon, tofu, mushrooms and other ingredients, and seasoned with garlic, shallots, scallions, ginger slices, etc. Finally, it is seasoned with oyster sauce, dark soy sauce and sugar, stewed until the flavors are absorbed, and thickened with cornstarch water. It has a rich taste and delicious flavor.
Ingredients
- 400 gram Winter melon (peeled and cut into large pieces)

- 10 Tofu (wash, blanch with hot water, cut in half)

- 250 gram Gammon Steak (probably pork belly)

- 6 piece Scallion (cut into sections)

- 6 piece Green onion (cut into pieces)

- 6 piece Ginger

- 6 piece Mushrooms (cut into pieces)

Steps
- Fry the gammon steak until both sides are golden brown.

- Cut the remaining ham into pieces and set aside.

- Heat up some oil in a wok, add the Gammon Steak ham back into the wok and stir-fry. Add garlic, shallots, scallion segments and ginger slices into the wok and stir-fry until fragrant.

- Stir-fry until fragrant, then add in mushroom cubes. Stir-fry until fragrant.

- When the whole thing is stir-fried until fragrant, add a cap of cooking wine (any wine) and stir-fry for a while.

- Add winter melon and tofu and stir-fry, then add hot water until it reaches 2/3 of the height of the food.

- Add one tablespoon of oyster sauce, half a tea of dark soy sauce, and one teaspoon of sugar. Since ham is salty, don't add too much seasoning at this time.

- Cover the pot and simmer over medium heat for ten minutes. Check the pot from time to time to see if there is any water left.

- Finally, mix one teaspoon of cornstarch and one teaspoon of water to make cornstarch water. Finish.
